Spinach is one of my favorite food. The great thing about it, besides being healthy is that is easy to cook and you can eat it fresh in a salad, or cook it. You can make quiet a number of delicious spinach meals – stew, soup, use it as stuffing for pierogis or dinner rolls or even put it on pizza. This recipe for spinach soup is both simple and satisfying and it is great for quick, tasty lunch or dinner. You can use fresh or frozen spinach.
Ingredients:
1 quart of water
5 quarts of spinach
1/2 cup of chopped onions
2 cloves of garlic
2 tbs of butter
2 tbs of flour
2 cups of milk
yogurt
salt and black pepper
1. Wash spinach with cold water.
2. Chop spinach, onion and garlic.
3. Add spinach (only) to boiling water and cook it for 20 minutes on low to medium heat.
4. Add onion and garlic, salt and pepper and let it cook for about 10 minutes.
5. In a mean time prepare a mix with butter, flour and milk. Melt the butter on a pan, add flour and stir it until smooth. Add milk and then add the mix to boiling soup.
6. Mix everything together.
7. Use one teaspoon of yogurt for a plate for decoration.
Spinach has octacosonal, which is good for weight loss and muscle tone and neuromuscular problems. It has natural vitamin E which means it has mix tocopherols and tocotrienols but just alpha or dl alpha tocopherols. It also has folic acid of course which is good for pregnancy. Also spinach as Iron and other nutrients. So Some Ukrainian spinach soup is not a bad idea if you want to be healthy. But maybe more important this Ukrainian spinach soup recipe tastes great.
