Ingredients:
2 bundles of asparagus
1 quart of stock
1 quart of water
1/2 a glass of white wine
2 egg yolks
1/2 a cup of sour cream
1 tea-spoon of sugar
salt and black pepper
3 tbs of chopped parsley
1. Peel white asparagus but keep the peels. No need to peel it if you use green ones.
2. Cut the hard endings off. Cut heads off and put them in a separate bowl.
3. Boil peels in water with wine for about 5 minutes, add salt and 1 tea-spoon of sugar.
4. Remove peels from water, add asparagus stems (but no heads) and boil them in the same water as peels.
5. When soft blend them with water, add stock.
6. Put asparagus heads and boil everything for about 2 minutes with salt and black pepper.
7. Mix sour cream and egg yolks.
8. Add it to a hot but not boiling soup. Mix well.
9. Decorate the soup with chopped parsley.
Asparagus is something that is cleansing for the kidneys. You can even smell the amino acids. Its great in the spring. It only grows every other year so I always found it hard to grow myself. For soup, its great. You can eat vegetable soup all day long and never gain an once.
