Tomato sauce the Russian way is simple. This is actually more from the Southern Republics near the Caucasus. It is called Adjika and a universal near eastern sauce.
- Get tomatoes that are vine grown or anything but the cheap hothouse. If you must you can use tomato paste, but it will not come out the same and in the day of hand blenders there is no reason not to make fresh tomato sauce.
- Chop three cloves of garlic
- Add fresh parsley and cilantro. I find cilantro pretty strong but it has chelating benefits and I got use to the taste. This is how Adjika is made with cilantro.
- Add one tablespoon of Cumin. a little fenugreek, sage, bay and oregano.
- 1/2 tsp of coriander.
- Hot peppers chopped in to tolerance.
- Although not Russian you can add olive oil instead of simply vegetable oil which would be use in the countryside but not good as polyunsaturated fats should not be heated.
- It should all come together to a paste.
This can be used on pitas, sandwiches fish, meat etc.
