Hard boiled eggs can be served with various topping or stuffing. In this recipe I use anchovies, but sardines are good as well. They are great for lunch or dinner. As you serve them cold you can prepare earlier and store in a refrigerator for an hour.
Ingredients:
6 eggs
1/2 a cup of very well chopped rucola
5 anchovies
1 tbs of olive oil or melted butter
1. Hard boil the eggs and place them into cold water.
2. Remove the shells carefully.
3. Cut the eggs in half lengthwise.
4. Gently remove the yolks with a spoon and put them in a bowl.
5. Cut anchovies in small pieces.
6. Crush the yolks them with a fork, add olive oil, anchovies and rucola. Mix everything well. The stuffing should be moist and have the consistency of a paste.
7. Put stuffing into egg whites and press the one half gently on the other. The egg should appear whole.
