Ingredients:
6 eggs
1 tea-spoon of melted butter
1/2 a tea-spoon of cayenne pepper
salt
chopped parsley
Sauce:
1 tbs od butter
1 tbs of flour
a pinch of cayenne pepper
salt
1/2 a glass of milk
1 egg yolk
2 tbs of red wine
Boil the eggs hard, put them in a cold water, remove shells. Cut the eggs in a half, remove yolks and put them in a bowl. Add melted butter, parsley, cayenne pepper and a pinch of salt. Mash this mixture very fine, fill the whites of the eggs and press two halves together so it looks like a whole egg.
Prepare sauce. Melt the butter and mix in with a flour, add pepper, milk and wine. Stir the mixture continually on low heat until it thickens. Beat the yolk and pour in the hot sauce. Pour sauce on eggs, decorate with parsley and eat hot.
