Polish people love sandwiches. Why? Their biggest meal is lunch and a sandwich is a typical supper meal in Polish cooking. They often eat open sandwiches, especially for breakfast or supper. Here is a Polish red pepper sandwich recipe.
Ingredients:
2 hard-boiled eggs
1 chopped red pepper (canned)
pinch of salt and black pepper
1 tea-spoon of mustard
2 tbs of grated american cheese or cheddar
2 tbs of melted butter
2 big rolls or 2-4 slices of bread
1. Boil the eggs hard (about 6 minutes, overcooked yolks will turn green).
2. Chop the eggs and pepper well.
3. Mix all ingredients together and spread on rolls or bread. If you prefer open style sandwich use 2 slices of bread, otherwise use 4.
4. Preheat the oven to 425 °F, put the bread in and bake it for about 5 minutes.
5. Serve hot, garnished with parsley or celery leaf.
