The reason herring is so popular in Poland is the Baltic sea is filled with herring. Also it has good brain oil, that is Omega 3. I personally eat herring for phosphatidylserine, it has 360 mg/100g of herring. This is one of the best neurotrophic out there, and maybe why Baltic Peoples are so smart. It increases the placidity of your brain. If you ever had trauma this will be useful.
- Poles eat herring either in cream or vinegar. I do not know why people do not fry them but I guess it is not the tradition. Here is a recipe with a twist in tomato sauce.
These are in descending order of quality
- Chop the herring into modest size pieces, the size of the head of the spoon about 1 1/2 inches
- Crush tomatoes to a sauce
- Add, canola or safflower oil (good for weight lose and high in linolenic acid, omega 3 and omega 6)
- Suger (not much) or a sweet juice
- Red wine vinegar or apple
- Tapioca starch or any thicker (optional)
- Wine
- Salt
The non-herring ingredients can be mixed in proportions suited to you.
Real Polish Herring
- Herring – soak it over night so it is not overly salty. When you buy it unless you get it fresh it is always too salty as they use it as a preservative.
- Sour cream I would mix is with mayo or yogurt, it should be a good amount because you have to cover all this Sledz (Polish word for herring).
- Onions like two large ones or many tiny small ones
- Olive oil
- sugar is optional
- any fruit from pear to Pinnapple
- Let it stay in the fridge for 3 hours
Then this is a herring salad in cream.
Some people like pickled herring
- Herring is like pickles
- 1 quart of water, add a half a glass of vinegar (I use apple cider as it is the healthiest with malic acid that does not destroy white blood cells).
- Bay leaves 3 or 4
- All spice
- gorczyca which is mustard seed in English
- Onions
- Olive oil
- You do not need salt as those little fish are already over salted
- Just soak it over night in the fridge
- You could add dill or garlic for taste
