The difference between Polish and American celery based recipes is that in Poland celery root is use more often than the celery stem so in this recipe you will need a celery root. This dish is a great appetizer and can be very good for an afternoon garden party as cold.
Ingredients:
1 celery root
1 small onion
salt and black pepper
1 tbs of mustard
3 tbs of mayonnaise
2 tbs of caviar
sliced beets (canned)
lettuce
Cut celery root in 4 pieces. Boil it until soft, for about 15-20 minutes. Peel the skin and mash the celery. Chop the onion well. Add onion, season with salt, pepper. Add mustard and 2 table spoons of mayonnaise. Shape into pyramids or balls. On top of each pyramid put some mayonnaise and caviar. Serve on a fresh lettuce leaf and a slice of beats.
Celery root is also excellent for a quick and easy salad. All you need is a celery root (fresh not boiled), 1 big apple and 1 tbs of mayonnaise and whipped cream (each).
Grind celery and apple, mix it, add mayonnaise and whipped cream, some black or white pepper for the taste and viola – your salad is ready. It is very simple, quick to make, healthy as you use fresh products and really delicious. If you like you can adda few raisins as they go very good with the other ingredients.
