This is a universal Eastern European celery soup recipe, Russian, Polish, Ukrainian recipe. Celery has a lot of magnesium and calcium and other minerals so its good for the nervous system. Legend has it, it is a tonic from head to hum hum. So make some celery soup and heal your nerves.
Now in Poland were I live many people use celery root, whereas in the USA where I am from celery stalks to make celery soup.
Creamy celery soup recipe
Ingredients:
- 1,5 quart of chicken stock
- 1,5 pound celery
- 2 onions
- 2 medium size carrots
- 4 tbs of butter or olive oil
- one large potato
- half a cup of sour cream or plain yogurt
- salt and black or white pepper
1. Chop celery, onion, carrot and potato.
2. Melt the butter in a large pot in a medium heat so it doesn’t get burnt, add onion, celery, potato and carrot. Fry it for few minutes (5 to 8 minutes).
3. Add chicken stock, bring everything to boil and then lower the heat and simmer the soup for 15 minutes. In the end add salt and pepper.
4. Let the soup cool down and blend.
5. Add sour cream.
You can serve the soup right away or in a cold day, warm it again in the pot. For decoration you can put some chopped celery on the top or simply add some croutons.
The thing about cream of celery soup is that it is fulfilling, healthy and yummy.
