My pitch for onions
In Eastern Europe onions are one of the central veggies. We do not have too many spices or exotic vegetables because of the short growing seasons, but onion is one of them. It is mild, healthy, a natural anti-biotic and it has sulphur which is good for the skin. accounting to natures law of signatures, onions have a lot of skin so it is good for your facial skin.
- Red onions are too strong here
- The best is a yellow onion or ordinary onion
- The smaller the onion generally the better as it has more nutrients per square cm and as big onions tend to be just juiced up. I like the small yellow natural ones.
My pitch for butter and olive oil
Now for butter, you can replace it with anything. In a traditional Eastern European way we use lard or animal fat like chicken fat. I prefer butter on a black iron skillet (better taste more iron). Also for cooking any monounsaturated fat is the best like olive oil or peanut oil and use animal fat or butter as flavoring. vegetable oil under heat is unstable and can cause damage to your body and not recommended.
Bread
Use natural breads for better taste. You know what natural breads are often by looking at them, nothing with too many additives. You can buy them at the deli. I have not found too many at Wal-Mart I like but I am sure there are some. My wife makes her own.
- Saute the onions
- Put them on top of the bread
- For variation use green onions or scallions or add herbs
