Barley soup is bit like chicken soup. It does have a different flavor though. My daughter, who likes only chicken soup and eats it even for breakfast, from time to time is willing to have barely soup and this is the only compromise with trying other soups then the chicken one. As a picky eater, she is also a good critic so you can be sure this will taste good…
Ingredients:
1 cup of barley
1 pound of ribs or chicken
2 onions
1 celery steam
2 carrots
1 parsnip
1/2 a cup of chopped parsley
2 quarts of water
2 bay leaves
5 whole allspice
2 large potatoes
salt and black pepper
1. Wash, peel and chop celery, carrots, parsnip, onions and potatoes.
2. Put the vegetables, meat and spices into a large pot, add water and let it boil.
3. Afterwards lower the heat and boil it slow for 1 hour.
4. In a meantime wash barley in cold water few times until the water is clear.
5. Add barley and well chopped parsley in the end of cooking, let it boil slowly for 10 minutes.
Barley soup is often serve with sliced bread.

Polish and soup
One thing I noticed when I moved to Poland was Polish meals often to not have anything to drink. Rather, at a restaurant people order soup. I think this started with/after communism and it was to save money as beverages are expensive.
When I was a child barley soup was once of my favorite recipes. I loved when my grandmother and mother bad this. Usually starting with bones or bone marrow.
