Herring is a universal fish in Eastern Europe. It is found in every shop like beef is in the USA. There are literally aisle of it and all types of varieties. I have seen curry, exotic fruits, raisins, sweet, spicy, sour all types of herring. They are either in a cream or vinegar base. This recipe however, is a Russia baked chopped herring recipe.
- Let the herring soak in cold water for about an hour to remove excess salt. The soak it for the an hour in butter milk or to moderate the fish flavor.
- Fillet the Herring and dice it and sautee lightly it in butter and olive oil with one large onion.
- Next add a batter, that is couple of egg yolks, cream or heavy milk and a quarter cult of bread crumbs or broekn up bread roll.
- Add herring to batter and add a little pepper and butter on a pan.
- Bake at 375 for about a half hour or less.
Herring is universal around the holidays in Russian, Ukrainian and Polish cooking. I prefer pickled herring recipes only because I am used to it I am going to try more baked herring.
